AlgaeCenter Denmark workshop: Focus on Seaweed in Food

In September, Algecenter Denmark hosted a workshop on seaweed and food at the beautiful Anneberg Kulturpark in Odsherred.

The workshop included expert presentations both from the network’s partners as well as academia, and Claus Henriksen, Anneberg Kulturpark’s own Michelin chef, also stopped by to share his approach to using seaweed at Restaurant Mota.

But it wasn’t just about talking — participants also had the chance to actively taste and experience seaweed through an interactive seaweed lunch prepared by Kokken på Kanten.

In addition, there was a constructive dialogue with the Danish Veterinary and Food Administration about guidelines for seaweed in the diet, as well as an update on the EU’s proposed limits for specific heavy metals and iodine in seaweed, presented by Susan Løvstad Holdt.
